Questions 36-40

Once an underground scene for wining and dining, Portland has blossomed into a haven for chefs and food lovers alike. Within the past few years, this medium-sized American city has seen many unique restaurants and farmers’ markets appear. This has made Portland a good place for those looking for something a little different. French, Italian, and Thai restaurants can all be found on the streets.

Portland owes its success to a number of young chefs who have moved there over the last five years. This is largely because Portland remains an inexpensive place to live in comparison to other West Coast cities such as San Francisco or Seattle. This allows chefs who have worked for big chain restaurants to take risks without facing the huge financial burdens of starting a restaurant in an expensive city. Another reason for Portland’s success is that the chefs can rely on the fresh, locally grown produce and meat supplied by the farming community in the area. Most of these farmers were part of the sustainable farming programs in the 1970s and have remained committed to high standards. The Willamette Valley region is a great example of ecologically friendly farming, and also boasts vineyards which produce wines with original flavor and elegance.
